Today was Day 1 of my Whole30 experience.
My daughter challenged invited me to do this Whole30 thing along with her. She started right away but I had to do some research first. And I'm still researching but I decided to get started today because I need to get a move on.
I am blessed to have the time to do this right now, a supportive husband, and really, I don't have any excuses not to. Yes, it's a lot of work but I've done a similar plan before while working and preparing food for myself, my husband, and our three children. How the hell did I do that?
So much planning and shopping and cooking. My meal planning is proving to be so half-ass and is not going to work here. I seriously need to up my game.
Meanwhile...
Day one was a success. I had coffee with coconut cream and no sweetner. And I survived! I spent most of the day cooking. Go figure. It's a good thing I have taken a liking to cooking more. I made Sweet Potato and Sausage hash for breakfast, chicken stock from the chicken I roasted last night, chicken salads, from that same chicken, for lunch, and grilled flank steak, broccili, and baked sweet potatoes for dinner. I now have leftovers for a couple of days breakfasts and lunches.
Then....more planning and more shopping.
So yes, it really IS about the food. It's also about taking care of myself and my body and that takes time and dedicated, focused attention. Huge learning curve here for me.
Hopefully, I'll get into a flow and be able to think about something else once in a while besides food. Like photographing my food with my Canon instead of my iPhone and moving to a new blog platform (is that what you call it?) becasue this one is tired.
